Warm Wild Mushroom Salad, Vietnamese Style

Ingredients
- 250 g mixed seasonal wild mushrooms, sautéed
- 1 carrot, julienned
- 1/2 cucumber, julienned
- Fresh mint and cilantro leaves
- 2 tablespoons lemon juice
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- Chopped toasted peanuts; chili to taste

Preparation
- Briefly sauté the wild mushrooms in a little oil until lightly browned.
- Mix lemon juice, fish sauce, and sugar for the dressing.
- In a large bowl, combine the carrot, cucumber, mint, and cilantro.
- Add the warm mushrooms and dressing; mix well.
- Finish with chopped toasted peanuts and chili to taste.
- Serve immediately, while the mushrooms are warm.
