Every rainy season, from July to October, the forests of central Mexico awaken. Simbiosis takes you to meet them firsthand, guided by Arif Towns Alonso, local nanacateras, and chefs who specialize in the cuisine of the territory.

What you experience on a Simbiosis tour
This is no ordinary walk. Each tour is a masterclass in the field, a culinary experience, and an encounter with the people who have known these forests for centuries.
Four moments of a tour
Mycological introduction
Before we enter the forest, Arif covers the fundamentals of field identification: warning signs, safety rules, and the ecological context of the territory.
Foraging walk
A guided route along forest trails. Every species we find is identified in situ: scientific name, local name, diagnostic features, edibility, and ecology.
Culinary experience
The mushrooms we gather are cooked in the field by a guest chef who specializes in the cuisine of the territory. Cooking as an extension of the forest.
Gathering and questions
A space to go deeper, share, and connect with others who love the fungal kingdom. Unhurried.
The first tour of the season
The forest in motion: the first foraging day of the season, on video.
