Simbiosis Mushrooms & Forest Cooking tour — wild mushrooms in the moss of the Sierra de Santa Rosa, Guanajuato

Every Sunday in July, the trails of the Sierra de Santa Rosa open for a day where mycology becomes living experience: to walk, to recognize, to illustrate, and to cook the Fungi Kingdom in its own habitat. We are the pioneers of mycotourism in Guanajuato.

Who walks with you

Arif Towns Alonso — the mushroom expert. Founder of Simbiosis and a mycologist at heart. For years he has roamed the forests of Mexico, studying, identifying, and sharing the Fungi Kingdom.

David Jahnke — the chef. A chef with 35 years of professional experience, an expert in culinary education and myco-gastronomy. He turns the day's harvest into an unforgettable meal, deep in the forest.
