Sichuan-Style Oyster Mushroom Stir-Fry

Ingredients
- 250 g cultivated oyster mushrooms, sliced
- 3 dried chiles (de árbol or guajillo)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- Vegetable oil for stir-frying; scallions for garnish

Preparation
- Heat vegetable oil in a wok over high heat.
- Add the dried chiles and stir-fry for a few seconds until fragrant, without burning.
- Add the garlic and ginger; stir-fry for 30 seconds.
- Add the mushrooms and stir-fry over high heat for 4 to 5 minutes, until lightly browned.
- Add the soy sauce, sesame oil, and rice vinegar; mix well.
- Serve immediately with fresh scallions and white rice.
