Sichuan-Style Oyster Mushroom Stir-Fry

Ingredients

  • 250 g cultivated oyster mushrooms, sliced
  • 3 dried chiles (de árbol or guajillo)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • Vegetable oil for stir-frying; scallions for garnish

Preparation

  1. Heat vegetable oil in a wok over high heat.
  2. Add the dried chiles and stir-fry for a few seconds until fragrant, without burning.
  3. Add the garlic and ginger; stir-fry for 30 seconds.
  4. Add the mushrooms and stir-fry over high heat for 4 to 5 minutes, until lightly browned.
  5. Add the soy sauce, sesame oil, and rice vinegar; mix well.
  6. Serve immediately with fresh scallions and white rice.
