Wild Mushroom and Chive Dumplings

Ingredients

  • 24 dumpling wrappers (gyoza or wonton)
  • 250 g seasonal wild mushrooms, finely chopped
  • 3 chopped scallions
  • 1 tablespoon chopped ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Soy sauce and rice vinegar for serving

Preparation

  1. Sauté the chopped mushrooms with the ginger until they release their moisture and reduce; let cool.
  2. Mix the mushrooms with the scallions, soy sauce, and sesame oil for the filling.
  3. Place a teaspoon of filling in the center of each wrapper and fold, sealing the edges with water.
  4. Steam for 8 to 10 minutes, or brown in a pan with a little oil, add a little water, and cover to finish cooking.
  5. Serve hot with soy sauce and rice vinegar for dipping.
