Ingredients
- 300 g mixed seasonal wild mushrooms
- 400 ml coconut milk
- 2 tablespoons red or green curry paste
- 1 tablespoon fish sauce or soy sauce
- 1 teaspoon palm sugar or piloncillo
- Thai basil leaves or fresh basil
- Jasmine rice for serving

Preparation
- In a pot, heat a small amount of coconut milk with the curry paste until fragrant.
- Add the remaining coconut milk and mix well.
- Stir in the wild mushrooms and cook over medium heat for 15 minutes.
- Season with fish sauce or soy sauce and palm sugar.
- Finish with fresh basil leaves.
- Serve hot over jasmine rice.
