Ingredients

  • 300 g mixed seasonal wild mushrooms
  • 400 ml coconut milk
  • 2 tablespoons red or green curry paste
  • 1 tablespoon fish sauce or soy sauce
  • 1 teaspoon palm sugar or piloncillo
  • Thai basil leaves or fresh basil
  • Jasmine rice for serving

Preparation

  1. In a pot, heat a small amount of coconut milk with the curry paste until fragrant.
  2. Add the remaining coconut milk and mix well.
  3. Stir in the wild mushrooms and cook over medium heat for 15 minutes.
  4. Season with fish sauce or soy sauce and palm sugar.
  5. Finish with fresh basil leaves.
  6. Serve hot over jasmine rice.
