Asian Wild Mushroom and Ginger Broth

Ingredients
- 300 g mixed seasonal wild mushrooms
- 1.5 liters vegetable or chicken broth
- 3 cm fresh ginger, sliced
- 2 cloves garlic, crushed
- 2 tablespoons soy sauce
- 1 stalk Chinese chives
- Sesame oil for serving

Preparation
- In a pot, heat the broth with ginger and garlic over medium heat for 10 minutes to infuse.
- Add the cleaned wild mushrooms and cook for 15 more minutes.
- Stir in the soy sauce and adjust salt to taste.
- Remove ginger and garlic if you prefer a clearer broth.
- Serve hot with Chinese chives and a drizzle of sesame oil.
