Cultivated Mushroom Bao with Hoisin Sauce

Ingredients

  • 8 steamed bao buns (store-bought or homemade)
  • 300 g mixed cultivated mushrooms: shiitake (Lentinula edodes) and oyster mushrooms (Pleurotus ostreatus), sliced
  • 3 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1/2 cucumber, thinly sliced
  • Fresh cilantro and pickled scallions for garnish

Instructions

  1. Steam the bao buns according to package directions.
  2. In a skillet, sauté the garlic and add the mushrooms.
  3. Sauté for 5 to 6 minutes until browned; stir in the hoisin sauce and soy sauce.
  4. Cook for 2 more minutes, until the mushrooms are well glazed.
  5. Open each bao and fill with mushrooms, cucumber, cilantro, and pickled scallions.
  6. Serve immediately, while the bun is hot and soft.
