Cultivated Mushroom Bao with Hoisin Sauce

Ingredients
- 8 steamed bao buns (store-bought or homemade)
- 300 g mixed cultivated mushrooms: shiitake (Lentinula edodes) and oyster mushrooms (Pleurotus ostreatus), sliced
- 3 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 clove garlic, minced
- 1/2 cucumber, thinly sliced
- Fresh cilantro and pickled scallions for garnish

Instructions
- Steam the bao buns according to package directions.
- In a skillet, sauté the garlic and add the mushrooms.
- Sauté for 5 to 6 minutes until browned; stir in the hoisin sauce and soy sauce.
- Cook for 2 more minutes, until the mushrooms are well glazed.
- Open each bao and fill with mushrooms, cucumber, cilantro, and pickled scallions.
- Serve immediately, while the bun is hot and soft.
