Fried Rice with Mushroom and Cordyceps

Ingredients
- 3 cups cooked day-old rice
- 200 g cultivated mushroom (Agaricus bisporus), quartered
- 1 teaspoon Cordyceps (Cordyceps militaris) powder, or the contents of 1 capsule
- 2 eggs
- 1/2 cup peas and diced carrots
- 2 tablespoons soy sauce
- 2 chopped green onions
- Vegetable oil

Instructions
- Heat oil in a wok or large pan over high heat.
- Sauté the mushrooms until golden brown; remove and set aside.
- In the same wok, sauté the peas and carrots for 2 minutes.
- Push the vegetables to one side, add the beaten eggs, and cook while stirring.
- Incorporate the cold rice, breaking up any clumps, and stir-fry over high heat.
- Add the soy sauce and reserved mushrooms; mix well.
- Just before serving, stir in the Cordyceps powder and mix.
- Finish with fresh green onions.
Functional Note
Mushrooms (Agaricus bisporus) provide fiber and plant protein. Cordyceps (Cordyceps militaris) has been researched for its contribution to exercise tolerance, and here it is subtly integrated into an everyday dish.
