Tarascan soup with mushrooms, Pátzcuaro style

Ingredients

  • 2 cups pinto beans, cooked with some of their broth
  • 4 ripe tomatoes
  • 1/4 onion for the base, plus 1/4 thinly sliced
  • 1 clove garlic
  • 2 pasilla chiles, one for the base and one in strips for garnish
  • 250 g oyster mushrooms (Pleurotus ostreatus), sliced
  • 2 sprigs epazote (Dysphania ambrosioides)
  • 1 liter vegetable broth
  • 3 tablespoons oil
  • Salt and pepper to taste
  • To serve: fried tortilla strips, fresh cheese, avocado, cream

  • 1 teaspoon 8 Mushroom Powder dissolved in the broth, for depth and functional benefits (optional)

Preparation

  1. Roast the tomatoes, onion piece, and garlic on a comal (griddle). Open one pasilla chile, remove the seeds, and lightly toast it.
  2. Blend the roasted tomatoes with the onion, garlic, toasted pasilla chile, and pinto beans with their broth until smooth. Strain if you prefer a finer texture.
  3. In a pot, heat 2 tablespoons of oil and sauté the sliced onion. Pour in the blended mixture and fry for 5 minutes, stirring.
  4. Add the vegetable broth (and the 8 Mushroom Powder, if using) and the epazote. Cook over medium heat for 15 to 20 minutes, until it thickens and gains body.
  5. Separately, sauté the mushrooms in the remaining tablespoon of oil until golden; set aside.
  6. Cut the second pasilla chile into strips and fry them for a few seconds, watching carefully as they can burn quickly. Also fry the tortilla strips.
  7. Serve the soup hot; top with sautéed mushrooms, tortilla strips, pasilla chile, fresh cheese, avocado, and cream.

Functional note

This soup combines beans—a source of fiber and plant protein—with oyster mushrooms (Pleurotus ostreatus), which provide β-glucans. Together, they contribute to a varied and comforting diet.
