Grilled cauliflower mushroom with mountain herbs and juniper — a tribute to Flocons de Sel (Renaut)

A tribute to Emmanuel Renaut, Meilleur Ouvrier de France, and his Flocons de Sel in the heights of Megève, where alpine cuisine is stripped down to its essentials: lake, forest, herbs, and mountain mushrooms. Beyond the porcini and chanterelle mentioned in the guide, we chose the cauliflower mushroom (Sparassis crispa), a treasure that grows at the foot of conifers, to bring the aroma of the mountain to the grill.
Ingredients
- 1 medium cauliflower mushroom (Sparassis crispa), about 400 g
- Mountain herbs: thyme, savory, young fir or juniper
- 3 crushed juniper berries
- Farm butter or oil, garlic, and coarse salt
- Light vegetable broth for glazing
- Lemon zest and black pepper

Preparation
- Carefully clean the cauliflower mushroom between its folds; it often retains forest sand. Dry it well.
- Separate it into large florets so that they maintain their structure over the fire.
- Grill it or cook it on a very hot grill with a drizzle of oil, turning until the edges are toasted and crispy.
- Separately, melt butter with garlic, crushed juniper, and herbs; glaze the florets with this aromatic butter and a little broth.
- Finish with lemon zest, coarse salt, and pepper. Let rest for a minute so the smoke and juniper settle.
- Serve on a warm stone or preheated plate, with fresh herbs on top. It should taste of the high forest.
