Shiitake and Lion's Mane Ramen

Ingredients

  • 200 g ramen noodles
  • 150 g fresh shiitake (Lentinula edodes), sliced
  • 1 teaspoon lion's mane powder (Hericium erinaceus), or the contents of 2 capsules
  • 1 liter bone or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 2 marinated eggs (ajitsuke tamago)
  • Scallions, nori, and sesame seeds for garnish

Simbiosis Products Used

Preparation

  1. Heat the broth and dissolve the miso paste and soy sauce in it.
  2. Sauté the shiitake in a separate pan until lightly browned.
  3. Cook the noodles according to package instructions.
  4. Just before serving, stir the lion's mane powder into the hot broth and mix well.
  5. Pour the broth over the noodles and add the sautéed shiitake and the marinated egg, cut in half.
  6. Garnish with scallions, nori, and sesame.

Functional Note

Shiitake (Lentinula edodes) has been researched for its contribution to immune function, and lion's mane (Hericium erinaceus) for its relationship with cognitive function. Together, they give this broth flavor and a functional profile at the same time.
