Pulque: the sacred drink of the agave

Pulque is a fermented drink made from agave aguamiel, considered sacred by the peoples of the Central Highlands since pre-Hispanic times. Today it is mainly produced in pulque haciendas in Hidalgo, Tlaxcala, and the State of Mexico.

Ingredients

  • 2 L of fresh agave aguamiel (unpasteurized)
  • A small amount of "seed" from already fermented pulque (optional, speeds up the process)

Preparation

  1. Pour the aguamiel into a clean clay or glass container.
  2. If you have pulque seed, add a little to inoculate the natural yeasts and bacteria.
  3. Cover with cloth and let ferment for 24-48 hours at room temperature; the aguamiel will become foamy and slightly acidic.
  4. Strain before serving; consume fresh, ideally on the same day it reaches its peak.
