Mediterranean Baked Stuffed Portobello Mushrooms

Ingredients

  • 4 large portobello mushrooms, stems removed
  • 150 g goat cheese
  • 100 g fresh spinach, chopped
  • 2 cloves garlic, minced
  • 30 g breadcrumbs
  • Olive oil, oregano, thyme, salt and pepper

Preparation

  1. Preheat oven to 200°C (392°F).
  2. Clean the portobellos and brush both sides with olive oil, salt, and pepper.
  3. In a pan, sauté the garlic and spinach until wilted.
  4. Mix the spinach with goat cheese, breadcrumbs, oregano, and thyme.
  5. Stuff each portobello with the mixture and place them on a baking sheet.
  6. Bake for 20 minutes until the filling is golden and the mushroom is tender.
  7. Serve hot, ideally with a drizzle of extra virgin olive oil.

Functional note

Cultivated portobellos (Agaricus bisporus) have a meaty texture that makes them ideal as a base for substantial vegetarian dishes, providing fiber and bioactive compounds characteristic of the fungi kingdom.
