Sun-roasted mushrooms with orchard citrus and herbs — a tribute to Mirazur (Colagreco)

A tribute to Mauro Colagreco and his Mirazur in Menton, where the cuisine follows the lunar calendar and biodynamic gardens dictate the menu among roots, leaves, flowers, and fruits. Colagreco is Italian-Argentine, and that's why we chose the almond mushroom (Agaricus subrufescens), a species of South American origin with an almond aroma, as a bridge between his roots and his Mediterranean garden. We do not reproduce his dishes: we follow his idea of cooking "from seed to plate."
Ingredients
- 300 g fresh almond mushroom (Agaricus subrufescens), or rehydrated
- 1 Menton lemon or yellow lemon, zested and juiced
- 1 blood orange, segmented
- Garden herbs: lemon thyme, fennel, parsley, and edible flowers
- Extra virgin olive oil, garlic, and flake salt
- A handful of tender green leaves

Preparation
- Clean the mushrooms and cut them into quarters. If they are dried, rehydrate them for 20 minutes and drain them well.
- Heat a frying pan with olive oil and a crushed garlic clove. Roast the mushrooms without moving them so they brown and release their almond aroma.
- When browned, remove the garlic and finish with lemon zest, flake salt, and a dash of its juice.
- Dress the green leaves and herbs with oil and a few drops of citrus.
- Assemble the dish like a small garden: mushrooms in the center, blood orange segments, leaves, and edible flowers around.
- Serve immediately, warm, so that the citrus and almond perfumes coexist on the plate.
