Sourdough Crostini with Lion's Mane — a tribute to Rosetta

A tribute to Rosetta and Elena Reygadas' Panadería Rosetta, where sourdough and wild mushrooms coexist with equal reverence. This original recipe brings those two worlds together on one slice: slow-fermented bread and lion's mane browned with garlic.

Ingredients

  • 4 slices of sourdough bread (slow-fermented)
  • 250 g lion's mane (Hericium erinaceus), sliced 1 cm thick
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, thinly sliced, plus 1 whole clove for rubbing the bread
  • 1 sprig of thyme or rosemary (a nod to Panadería Rosetta's rosemary bun)
  • Zest of 1/2 lemon and 1 tablespoon chopped parsley
  • Sea salt and pepper · optional: Parmesan shavings or chili flakes

Preparation

  1. Clean the lion's mane with a cloth and cut it into thick slices. When browned, its texture is reminiscent of seafood.
  2. Heat 2 tablespoons of oil over medium-high heat. Place the slices and brown them for 3 to 4 minutes per side, pressing lightly, until caramelized and firm. Add the sliced garlic and thyme in the last minute. Season with salt and pepper; finish with lemon zest and parsley.
  3. Toast the sourdough bread until crispy. Rub it with the whole garlic clove and drizzle with olive oil.
  4. Assemble the browned lion's mane on each slice. Top with Parmesan shavings (optional), olive oil, and chili flakes.
  5. Serve immediately, while the bread is warm and the mushroom is crispy.
