Ingredients

  • 300 g mixed seasonal wild mushrooms
  • 1 medium potato, diced
  • 1/2 chopped onion
  • 500 ml vegetable broth
  • 100 ml whipping cream
  • Chives, dill, or fresh parsley for garnish
  • Olive oil, salt, and pepper

Instructions

  1. In a pot, sauté the onion in olive oil until translucent.
  2. Add the wild mushrooms and sauté for 5 minutes.
  3. Add the potato and vegetable broth; cook over medium heat for 20 minutes until the potato is soft.
  4. Blend until a smooth cream is obtained.
  5. Stir in the whipping cream, salt, and pepper to taste.
  6. Chill in the refrigerator for at least 2 hours before serving.
  7. Serve cold, garnished with fresh herbs and a drizzle of olive oil.
