Chilled Wild Mushroom and Fresh Herb Soup

Ingredients
- 300 g mixed seasonal wild mushrooms
- 1 medium potato, diced
- 1/2 chopped onion
- 500 ml vegetable broth
- 100 ml whipping cream
- Chives, dill, or fresh parsley for garnish
- Olive oil, salt, and pepper

Instructions
- In a pot, sauté the onion in olive oil until translucent.
- Add the wild mushrooms and sauté for 5 minutes.
- Add the potato and vegetable broth; cook over medium heat for 20 minutes until the potato is soft.
- Blend until a smooth cream is obtained.
- Stir in the whipping cream, salt, and pepper to taste.
- Chill in the refrigerator for at least 2 hours before serving.
- Serve cold, garnished with fresh herbs and a drizzle of olive oil.
