Ingredients
- 4 large wild porcini mushrooms (Boletus edulis var. edulis), halved
- 4 tablespoons extra virgin olive oil
- 2 cloves garlic, finely minced
- Fresh parsley, chopped
- Sea salt and black pepper to taste
- Lemon to taste

Instructions
- Clean the porcini mushrooms with a soft brush, without soaking them in water to preserve their texture.
- Cut into thick halves and brush with olive oil, garlic, salt, and pepper.
- Grill or pan-fry in a cast-iron skillet over medium-high heat, 4-5 minutes per side.
- Finish with fresh parsley and a squeeze of lemon juice before serving.

Porcini mushrooms are among the most gastronomically valued wild mushrooms in the world for their deep, nutty flavor; during the rainy season in Mexico, they appear in mid-altitude pine-oak forests.
