Huitlacoche (Ustilago maydis) is the black gold of the milpa: a fungus that colonizes the corn cob and transforms it into swollen, ink-colored kernels with a smoky, earthy flavor. Here it comes whole, still on the cob, just as Mesoamerican tradition dictates.
