Ingredients
- 1 sheet of puff pastry or shortcrust pastry
- 300 g mixed seasonal wild mushrooms, sautéed
- 150 g goat cheese
- 2 eggs
- 100 ml heavy cream
- 1 caramelized onion
- Fresh thyme, salt, and pepper

Preparation
- Preheat oven to 190°C and line a tart pan with the pastry.
- Blind bake for 10 minutes to prevent sogginess.
- Whisk the eggs with cream, salt, and pepper for the filling.
- Spread the sautéed wild mushrooms and caramelized onion over the base.
- Pour the egg and cream mixture over, and crumble goat cheese on top.
- Bake for 25-30 minutes until set and lightly golden.
- Let rest for 5 minutes before slicing; serve warm with fresh thyme.
