Ingredients

  • 1 sheet of puff pastry or shortcrust pastry
  • 300 g mixed seasonal wild mushrooms, sautéed
  • 150 g goat cheese
  • 2 eggs
  • 100 ml heavy cream
  • 1 caramelized onion
  • Fresh thyme, salt, and pepper

  1. Preheat oven to 190°C and line a tart pan with the pastry.
  2. Blind bake for 10 minutes to prevent sogginess.
  3. Whisk the eggs with cream, salt, and pepper for the filling.
  4. Spread the sautéed wild mushrooms and caramelized onion over the base.
  5. Pour the egg and cream mixture over, and crumble goat cheese on top.
  6. Bake for 25-30 minutes until set and lightly golden.
  7. Let rest for 5 minutes before slicing; serve warm with fresh thyme.
