The king oyster mushroom, Pleurotus eryngii, is the most fleshy and robust of the oyster mushrooms: a firm white stem that in cooking mimics the texture of scallops or abalone. But its most recent interest is not on the plate, but in a molecule that it concentrates like few other foods on Earth: ergothioneine, an antioxidant amino acid that science has cautiously begun to call the longevity vitamin.

Ergothioneine selectively accumulates in tissues most exposed to oxidative stress thanks to its own transporter (OCTN1), suggesting a specific physiological role. Recent research links it to healthy aging and describes how it contributes to maintaining the cell's antioxidant defenses. The king oyster mushroom consistently ranks among the most concentrated food sources.
Natural source of vitamin D
Like all mushrooms, the king oyster mushroom contains ergosterol; when exposed to UV light, it transforms into vitamin D2, making it a food that supports the intake of this vitamin, especially in plant-based diets.
Beta-glucan contribution
Its polysaccharides share the immunomodulatory and metabolic support profile characteristic of the genus Pleurotus.
How to take it
It is primarily a gourmet food: its ergothioneine resists cooking well, so sautéed, roasted, or grilled, it retains much of its value. It is also found dehydrated and in concentrated ergothioneine extracts.
