On the dead wood of elder and other trees sprouts a gelatinous, translucent fungus, with the unmistakable shape of an auricle: wood ear, Auricularia auricula-judae. Present in Chinese cuisine for centuries under the name mu-er (literally “wood ear”), it is both one of the most widespread culinary fungi in the world and a growing object of nutritional study, because beneath its crunchy texture it hides surprising cardiovascular chemistry.

Its phenols and melanin show a remarkable ability to neutralize free radicals, which helps maintain balance against oxidative stress.

AAP polysaccharides have been studied for their structure-activity relationship with immune cells, a trait shared with other fungi and which supports basal immune response.
How to take it
Unlike most medicinal mushrooms, wood ear is primarily a food: it is rehydrated and incorporated into soups, stir-fries, and salads, providing fiber and texture. It also exists in extract for concentrated use.
